Work It Wednesday

I am sorry for posting so late. I have been working Easter presents for my nieces and nephew. I have also been handling all kinds of problem solving at home and had a very productive day.

Here is a sneak peak at the pattern I am putting up tomorrow.

Look tomorrow for a pattern and brief tutorial on how to make Anne’s flowers for her Easter Garden.  Hopefully I can get my scanner working and get the pattern posted.

Gratitously Cute Picture Post

My apologies, I was going to do a post today about how to check your gauge when knitting. However, my darling 16 month old, Anne, decided to climb out of her crib for the first time, and has since done it three more times today, no matter my efforts to keep her in.  Needless to say, nap time isn’t happening because why stay in the crib and sleep when she can get out and play with EVERYTHING in her room and closet.

Instead of the gauge post, which I promise I will post (I think I will save it for after my next video tutorial on how to do a purl stitch), I am posting this super cute picture of Samantha wearing the  corker bow that her mom won from us several weeks ago.

Doesn’t she look darling?!?

What are your little one’s up to today? Any suggestions for how I should handle the climbing out of the crib situation?

Work It Wednesday

I’m working on finishing up my sample of a knitting pattern I am posting tomorrow for all of our knitters.

I am also working on a knitting needle case. I have it all finished with the exception of the hand sewing and the ties. It turned out pretty well and I will be posting a tutorial for it in the future. Best part is that it will use up some of you Fat Quarter stash!

I was working on quilting the butterfly quilt but ran into a sewing machine foot snag. The darning foot my mom sent me does not fit my machine 🙁  So I had to order a new one, which should arrive next Wednesday. I hope it A. fits and B. I can get the quilt finished by march 27th to enter it into a local quilting contest.

Yummy Bell Pepper Casserole

It’s beginning to look a lot like Christmas…or maybe that is just the color of my bell peppers.

I love a good stuffed bell pepper.  Not so easy to cook or nearly as vegetable hearty as it COULD be though.  How does a bell pepper casserole sound?  I love cooked bell peppers so it sounds totally scrumptious to me!

Ingredients:

1 lb ground beef or turkey for those watching their cholesterol
2 cloves garlic – minced
1/2 a head of cabbage – chopped/shredded
1 cup minute rice (I use brown minute rice)
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
1/2 onion – chopped
1 14oz can diced tomatoes (you can use fresh, but I do not have that kind of time)
1/2 tbsp salt
1/2 tsp pepper
1.25 cups water
1 cup shredded cheddar cheese (I use sharp)

Directions:

  1. Pre-heat oven to 350 degrees
  2. Cut your veggies

Cabbage

3. Brown ground beef with garlic, drain fat

4. In large bowl combine all ingredients and mix together – put in casserole dish

4. Bake for one hour – take out and stir after 30 minutes

5. Remove from oven, top with cheese, serve after cheese has completed melted

out of the oven

A healthy yummy dinner!

Serves a family of four with enough leftovers for lunch the next day.

Cookies for my Valentine

My honey is from New Mexico and I am from California.  His all time favorite cookies are Bizcochitos. Prior to meeting him, I had never heard of a Bizcochito.

When we were engaged and he was stationed in Germany he asked me to make him a batch and send them to him.  His comment to me upon receipt was “They don’t taste like my mom’s.” Now I love my mother-in-law, but I love her even more for one reason, when I told her this story she scolded him and told him to not EVER say that to me again!

For Christmas 3 years ago she gave us a dozen Bizcochitos and her recipe. Thank Heaven!

My hubby, mom and dad loved these cookies.

 

Ingredients:
1 lb. – Lard
1 cup – Sugar
2 – Eggs
1 tsp. – Anise Seed
6 cups – Flour
3 tsp – Baking Powder
1/2 tsp – Salt
2 or 3 oz – water
1/2 cup sugar mixed with 1 tsp cinnamon
Food color – I added some red food color to make them slightly pink for Valentine’s Day

Instructions:

Pre-heat oven to 350 degrees.


Cream sugar and lard until light and fluffy.
Add eggs and anise and mix well.
Sift together baking powder, salt and flour.
Add to egg mixture, a little at a time and kneed until well mixed.
Add enough water to hold mixture together (I added the food color to the water).


Roll out onto floured board to 1/2 inch thick and cut into desired shapes.



Sprinkle with cinnamon-sugar mix.

Bake at 350 degrees for 10 to 12 minutes.

My honey now has yummy treats to eat during his long days at work!




Depending on the shapes you decide to make, this recipe can make up to 6 dozen cookies.

I hope you enjoy them as much as my honey will!

P.S. These are a budget recipe too!  I only spent $3.00, because with the exception of the lard and anise seed, I already had ALL the ingredients! WOOT!
