Yummy Bell Pepper Casserole

It’s beginning to look a lot like Christmas…or maybe that is just the color of my bell peppers.

I love a good stuffed bell pepper.  Not so easy to cook or nearly as vegetable hearty as it COULD be though.  How does a bell pepper casserole sound?  I love cooked bell peppers so it sounds totally scrumptious to me!

Ingredients:

1 lb ground beef or turkey for those watching their cholesterol
2 cloves garlic – minced
1/2 a head of cabbage – chopped/shredded
1 cup minute rice (I use brown minute rice)
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
1/2 onion – chopped
1 14oz can diced tomatoes (you can use fresh, but I do not have that kind of time)
1/2 tbsp salt
1/2 tsp pepper
1.25 cups water
1 cup shredded cheddar cheese (I use sharp)

Directions:

  1. Pre-heat oven to 350 degrees
  2. Cut your veggies

3. Brown ground beef with garlic, drain fat

4. In large bowl combine all ingredients and mix together – put in casserole dish

4. Bake for one hour – take out and stir after 30 minutes

5. Remove from oven, top with cheese, serve after cheese has completed melted

out of the oven

A healthy yummy dinner!

Serves a family of four with enough leftovers for lunch the next day.

What is a Fat Quarter worth?!?

My husband calls me a hoarder, I resent this, I feel I am more of a collector.

I collect beautiful yarns, fabrics, ribbons, clothes, shoes…well you get the idea.

I have amassed quite a collection of fat quarters since I started quilting 10 years ago.

This is just a small sample of the collection. Needless to say I have to figure out some way to use them or my husband will have a coronary!

The question I had to ask myself was: What can you get out of a fat quarter?

Well, for all you quilters, here is the answer!

Fat Quarter Squares:
99 – 2″ Squares or
50 – 2.5″ Squares or
42 – 3″ Squares or
30 – 3.5″ Squares or
20 – 4″ Squares or
16 – 4.5″ Squares or
12 – 5.5″ Squares or
9 – 6″ Squares or
6 – 6.5″ Squares
Now that is just squares!  Imagine what other shapes you could get out of your fat quarters.
I am so excited I might just have to go make a few blocks from the 50 fat quarters pictured above.

Work It Wednesday!

What are you working on?

As always, I have about 10 projects in the queue. The two that are uppermost on my list are a St. Paddy’s day pillow stuffie – stay tuned for the pattern, and my butterfly quilt. I finally managed to get my back pieced and the batting cut, now I need to start safety pinning.

I am on my second rendition of the pattern, the first draft you can see didn’t turn out so well 🙂

Deconstructed Sloppy Joe’s

Maybe I watch too much Top Chef…but I decided to call this recipe Deconstructed Sloppy Joe’s. It is super easy to make, kid friendly, budget friendly and YUMMY!

As I said this is a kid friendly and budget friendly dinner. My husband and I love this towards the end of the month when pay day is still a few days away, if you know what I mean.

The Ingredients:

1 lb ground beef (you could substitute ground turkey)
1 large can vegetarian baked beans (I like Bush’s)
1 cup (ish) Favorite Barbecue Sauce (I don’t really measure, I pour until it looks good)
1 tbsp Instant Chopped Onion (or 1/4 cup chopped onion) – I’m a busy mom with a toddler, instant is easier!
2 cloves minced garlic (I use the jarred garlic because it is easier)
1 canister of refrigerated biscuits (I like the butter biscuits)
3/4 cup shredded cheddar cheese

Directions – with pretty pictures!
Step 1: Preheat your oven to 375 degrees
Step 2: Brown beef with onion and garlic
(drain fat)
Step 3: Add in BBQ Sauce and Beans
Bring all ingredients to a bubble
Step 4: Transfer to a large oven proof casserole dish
Step 4: Slice 6 biscuits lengthwise
Step 5: Top bean and beef mix with biscuits
Step 6: Bake in pre-heated oven for 18 min or until biscuits are golden brown

Step 7: Top with Cheddar Cheese, allow to melt completely before serving

My Craft Bucket List

For New Years this year my honey and I wrote our bucket lists. Well…to be perfectly honest, I wrote mine and he sat there wondering why I was writing one.

I started thinking that I need a craft bucket list. I always say to myself that I am going to learn how to do this or that, but I don’t always make a concerted effort to do said thing.  Maybe if I had a bucket list I would hold myself more accountable. After all, this year alone I am going to get to cross at least one thing off my New Years bucket list!
